Clean mushrooms and cut them into thin slices. Chop parsley and garlic together and fry them lightly.
Add mushrooms and let them cook for about ½ hour, pouring, if necessary, some hot broth on them.
Adjust salt to taste and arrange them in pots.
Let them sterilize for two hours and, the following day, for a further hour.
Before tasting, let them cook for ¼ hour.
