Ingredients for 4 people:
700 gr. Turkey meatloaf
300 gr. Mushrooms in oil
50 gr. Cooked ham in slices
1 celery stalk
1 bay leaf
1 clove of garlic
1 parsley sprig
1 glass dry Marsala
4 spoons of extra-virgin olive oil
Chop carrot, onion and celery together.
Let some garlic brown for 1-2 minutes in an oven-proof dish. Then take it away and add the meatloaf. When it is golden brown all over add the chopped carrot, onion and celery, pour some Marsala over it, add salt and pepper, bring it back to a boil, then put it into the pre-heated oven at 200°. Let it bake for about 30 minutes and drizzle with some cooking sauce; cook then for a further 30 minutes. After 10 minutes, before removing from heat, add mushrooms in oil and chopped parsley.
Then drip the meatloaf, cut it into slices, put it on a course dish with the mushrooms and pour some sauce over it. Garnish to taste and serve.
