RISOTTO WITH KIWI AND MUSHROOMS

Ingredients:

Ingredients for 4 people:

400 gr. rice
3 kiwis
35 gr. dried pleurotus
85 gr. butter
60 gr. minced onion
Chicken broth
grated Parmesan cheese
salt, pepper

Preparation:

Let onion brown in 60 gr. butter. Add the mushrooms you have previously washed and rice. Let it fry lightly and cook, slowly adding some hot broth.
Towards the ending of the cooking process add two peeled kiwis and squeeze them with a fork. Stir all of the ingredients carefully. Then stop cooking and add the remaining butter together with some grated parmesan cheese.
Garnish with kiwi slices.
