Ingredients for 4 people:
4 salmon slices
300 gr. sundry mushrooms
50 gr. butter
3 spoons oil
1/2 glass dry white wine
1/2 glass fresh cream
Clean the salmon slices, taking away the outer surface (skin).
Wash and drain them, then saute them with 30 gr. butter until they turn golden brown. Clean the mushrooms and wash them quickly under running water; drain and cut them into thin slices, keeping the smallest ones intact.
Saute them in another pan with the remaining butter and chopped onion.
Sprinkle with some wine and let it boil off over high heat. Then lower the heat and let it cook for a further 10 minutes.
Add some cream and let it thicken for some minutes, adjust salt and pepper to taste.
Lastly, add the salmon slices, sprinkle with some chopped parsley and let it cook for a further 3 minutes.
